Falafele (wegańskie)

Falefele z kminem, chili, czosnkiem i ziołami

Składniki:

ciecierzyca 400 g
świeże zioła 2 garście
czosnek 2 ząbki
cebula 1/2 sztuki
sól do smaku
pieprz do smaku
chili do smaku
kmin rzymski 1 łyżeczka
olej roślinny 1 litr - do smażenia

Przygotowanie:

Ciecierzycę namaczamy przez noc w lekko posolonej wodzie. Odsączamy i dzielimy na pół. Jedną część gotujemy w wodzie (lub bulionie warzywnym z przyprawami) około 40 minut, do miękkości, i odstawiamy do przestygnięcia. Rozdrabniamy obie porcje ciecierzycy (maszynką do mięsa, malakserem lub blenderem ręcznym) i mieszamy z posiekanymi lub zmiksowanymi: ziołami, czosnkiem i cebulą. Doprawiamy solą, pieprzem, chili, mielonym kminem rzymskim i ewentualnie zmielonymi ziarnami gorczycy, kardamonu, kolendry i startym cynamonem. Jeśli lubimy ciemniejsze falafele, dodajemy ½ łyżeczki sody oczyszczonej. Jeśli masa wydaje się sucha, dodajemy kilka łyżek wody. Odstawiamy na kilka minut. W tym czasie rozgrzewamy olej do mniej więcej 190 stopni.

Next, gently fold the diced bananas and dark chocolate chips into the batter.
Grease a donut pan generously with coconut oil and pour batter into the donut pan.
Bake at 400 degrees Fahrenheit for approximately 10-12 minutes. Check for doneness by poking with a toothpick…they are fully cooked when the toothpick comes out clean.

Bezglutenowe naleśniki szpinakowe

Bezglutenowe naleśniki szpinakowe

Składniki:

2 Tablespoons Palm Shortening Or Cooking Fat Of Choice
⅓ cups Tapioca Flour
¼ cups Coconut Flour
1 Tablespoon Psyllium Husk Powder
1 teaspoon Baking Powder
½ teaspoons Onion Powder
½ teaspoons Garlic Powder
½ teaspoons Salt
2 cups Fresh Baby Spinach
1 cup Egg Whites (or Whites From 12 Large Eggs)
½ cups Water
2 Tablespoons Apple Cider Vinegar
1 Tablespoon Honey Or Sweetener Of Choice

Przygotowanie:

Preheat frying pan on low heat. Melt palm shortening and set aside.

Add all dry ingredients except spinach to blender; blend on high speed for 20-30 seconds to sift and combine dry ingredients thoroughly. Empty into large mixing bowl and set aside.

Add all wet ingredients to blender, including the spinach, and blend on high until smooth and well mixed. Add dry ingredients back in and blend until well incorporated with wet ingredients.

Dip your pastry brush in the liquid fat and brush a thin coating all over your frying pan, coat it thoroughly, and don’t skip around the edges. The oil will go very far when you spread it thinly.

Using a ladle or spoon, pour about 1/4 cup of the batter into the greased frying pan and swirl it around to spread it out in the pan until it’s the size you want (6″ rounds are recommended). Try not to stretch it too thin or it might tear or cook unevenly.

Cook until lightly browned and firm on one side, gently flip over and cook other side until also lightly browned and firm.

After each crepe, remove it from the pan onto a plate and brush with cooking fat before each ladle goes in. I don’t recommend cooking more than one at a time unless you use a large griddle.

Repeat until all batter is used.

Notes:
Don’t be alarmed when batter thickens the longer it sits. Quickly spread it out in pan to avoid uneven cooking.
I highly recommend using these as savory crepes, lasagna noodles, manicotti shells, Mexican casseroles, or as a sandwich wrap!

Ciasto kokosowo-cytrynowe (paleo)

Ciasto kokosowo-cytrynowe (paleo, bezglutenowe, bez laktozy)

Składniki:

1½ cups coconut flour
2 tbsp almond flour
3 egg whites
½ cup unsweetened applesauce
¼ cup melted and cooled coconut oil
3 tbsp honey
1 tsp lemon extract
½ cup fresh lemon juice
zest of 1 large lemon
1 tsp baking soda
1½ tsp baking powder
¼ tsp salt

Przygotowanie:

Preheat oven 350 degrees F and prepare a 9x9 baking pan with nonstick cooking spray.
In a standing mixer or using a hand mixer, combine egg whites with salt, lemon juice and lemon extract. Mix ingredients until egg whites are thick and fluffy.
Add honey, unsweetened applesauce and coconut oil and mix to combine.
In a separate bowl, combine baking soda, baking powder, almond flour and coconut flour.
Then add flour mixture slowly to liquid mixture while mixing. Do not over combine. The coconut flour will absorb the liquid quickly so you do not need to mix much.
Place the bread mixture in the baking pan. Use the palm of your hand to gently press it evenly throughout the pan. Then add the zest of one lemon evenly to the top of the bread.
Bake the cake 50 minutes or the top turns golden brown.
Remove from the oven and allow the cake to cool at least 30 minutes before removing from the pan. Cool another 30 minutes on a rack before slicing into 12 luscious bars.

Placek z kaszy gryczanej z borówkami

Bezglutenowy, wegański placek z kaszy gryczanej z borówkami

Składniki:

400 g kaszy gryczanej niepalonej
200 g daktyli suszonych
200 g dojrzałego banana
250 g borówek

Przygotowanie:

Kaszę gryczaną niepaloną zalać zimną wodą i moczyć przez minimum 12 godzin.

Daktyle zalać gorącą wodą i pozostawić aż zmiękną. Odlać wodę. Jeśli masz mocny sprzęt to długie moczenie daktyli nie będzie konieczne, ale pamiętaj: te słabsze urządzenia mogą umrzeć śmiercią tragiczną jeśli potraktujesz je daktylami.

Odlać wodę z kaszy i porządnie ją przepłukać przez sito.

Zblendować na gładko banany i daktyle. Dodać odcedzoną kaszę i zblendować wszystko dokładnie.

Ciasto przełożyć do foremki na tartę (śr. 30 cm). Wyrównać ciasto i wyłożyć na nim borówki. Lekko je wcisnąć w ciasto.

Placek piec w temperaturze 180 stopni przez 35-40 minut.

II
In a large mixing bowl, mix all of the dry ingredients with a whisk. Then add the wet oat mix and the oil.  Mix well and let the batter sit for just a few minutes to soak up the moisture. Then pour the batter into a well oiled bread pan and top with a sprinkle of dry oats. Then put in a preheated 350 degree oven and let bake for 45-50 minutes. Check then to see if the bread is baked through in the middle, if not, let it continue to cook for 5-10 more minutes until it is not gooey and golden brown.

Pianki marshmallow

Domowe pianki marshmallow

Składniki:

szklanka miodu
szklanka wody
3 łyżki żelatyny
½ szklanki syropu klonowego (można zastąpić miodem)
wanilia
(opcjonalnie sok malinowy)

Przygotowanie:

W ½ szklanki wody rozpuszczamy 3 łyżki żelatyny, mieszamy dobrze i zostawiamy do ostygnięcia.
Przekładamy do formy, ja wykorzystałem formę silikonową o wymiarach 21x21cm (nasmarowaną olejem koko),  wierzch przygotowanej pianki można polać sokiem malinowym lub innym ulubionym.

1 1/2 cups gluten-free oat flour
1/2 cup buckwheat flour
1/2 cup tapioca starch
1/2 cup potato starch
2 tbsps ground psyllium husk (or 2 tsps xanthan gum)
1 1/4 tsps salt
2 tsps instant yeast
1 cup warm water
1/2 tsp cider vinegar (or lemon juice)
2 tbsps honey
3 tbsps olive oil (or softened butter)
2 large eggs

Przygotowanie:

Mix flours, starches, psyllium husk, salt and instant yeast with a stand mixer with paddle attachment (or hand mixer) until well combined.
Add vinegar and honey to the water and mix well.
Add in the liquid gradually and mix until the mixture has come together (it is dry and crumbly).
Mix in olive oil and beat at low speed until blended.
Add in eggs, one at a time (beat at low speed until incorporated before adding another).
When all eggs are added, scrap the side and bottom of the mixing bowl, then beat the batter at high speed until smooth (about 3 minutes, add extra 1-2 tbsps water if the batter is too dry).
Scrap the sides of the mixing bowl, cover and let the thick sticky batter rise for 45 minutes (at room temperature).
Lightly grease and line a loaf pan (9" x 5" x 2.75").
Transfer the risen batter to the prepared pan, then smooth the surface with wet spatula and fingers.
Put the pan in a closed oven and let the batter rise until it domes nicely, about 12-15 minutes.
Set the oven to 355°F/180°C and bake the bread for about 35-40 minutes, or until golden brown.
Remove the bread from the pan immediately and cool on a wire rack before slicing.
When cooled, cut into slices using a serrated knife. Best served fresh from oven.

Owsiany chleb z chia i melasą

Bezglutenowy, wegański chleb owsiany z chia i melasą

Składniki suche:

2/3 cup of freshly ground buckwheat flour
1/2 cup of organic millet flour
1/2 cup of tapioca flour
1/2 cup of organic brown rice flour
1/2 cup of chia seed meal
1/4 cup of coconut sugar
1 1/2 ts. of baking powder
1/2 ts. of baking soda
1/2 ts. of sea salt
1/3 cup of olive or grapeseed oil
1/4 cup of blackstrap molasses

Składniki mokre:

1 cup of gluten-free rolled oats
2/3 cup of coconut milk beverage
1-2 TB of lemon juice
1 1/4 cup of boiling water

Przygotowanie:

In a large mixing bowl, blend all of the gluten-free flours together with a whisk and then with the rest of the dry ingredients. You can add the oil and molasses in a pool in the middle of the dry. Then pour in the wet mixture after it has sat for 5 minutes.

In a small glass bowl, pour the boiling water over the dry oats and then add the milk and lemon as well. Let it sit for 5 minutes or so to get soft and have the milk and lemon culture just a bit. Then add it to the above mixture of ingredients. Mix well and then let the batter sit for 5-10 minutes for the flours and chia to soak up the moisture and become more thick. Then grease a bread pan with coconut oil and a gluten-free flour. Pour the batter into the bread pan and smooth over like a quick bread and then top with some more flour, gluten-free oats or seed of choice.

Bake in a preheated 350 degree oven for 45-50 minutes until the bread crust is hard on top and the middle of the bread is NOT gooey to the toothpick test.

Pull from oven and let cool for 15-20 minutes before sliding from pan and continuing to let cool on a bread or cookie cooling rack. When mostly cool, then you can use a bread knife and slice thin or thick slicing depending on your preference. This bread stays well for 3 days and is great toasted the next day in a toaster oven to warm up and spread some of your favorite toast goodness on top.

Bezglutenowa, wegańska gryczana tortilla (naleśnik)

Składniki:

kasza gryczana niepalona
woda
olej do smażenia

Przygotowanie:

Kaszę gryczaną zalewamy wodą (temperatura pokojowa) i zostawiamy na całą noc. Następnego dnia odlewamy wodę i na dużym sitku przepłukujemy ją dokładnie. Blendujemy ją ze świeżą wodą. Konsystencja ciasta powinna być zbliżona do ciasta naleśnikowego. Ja wolę bardziej lejące gdyż wtedy naleśniki wychodzą cieńsze. Po dokładnym zblendowaniu gryki i wody naleśniki smażymy na dobrze nagrzanej patelni, wysmarowanej lekko olejem kokosowym.

Tort kokosowo-jeżynowy

Tort kokosowo-jeżynowy bez glutenu i bez cukru

Składniki na ciasto:

5 dużych jajek
100 g ksylitolu
120 g mąki gryczanej jasnej lub ryżowej
20 g kokosowej
1 mała łyżeczka octu (winnego/jabłkowego)
1 łyżeczka bio proszku bezglutenowego (można użyć zwykłej sody)
duża szczypta soli

Składniki na krem biały:

cała puszka mleczka kokosowego (85%, użyłam Real Thai) schlodzone
1-2 łyżki ksylitolu (opcjonalnie)
całe opakowanie mrożonej jeżyny
2 duże łyżki nasion chia (zamiennik - 1 łyżka rozcieńczonej żelatyny)
2 łyżki soku z jeżyn

Składniki na krem jeżynowy:

rozmrożone jeżyny zmiksuj z 2 łyżkami słodzika (u mnie ksylitol)
+ szczypta wanilii

Przygotowanie:
